Top 5 Recipes in Under 10 Minutes

Let’s be serious, between all the kids’ school schedules, activities, social commitments and our own work, meals, and social commitments, there are some days that we just can’t get it together enough to feed our kids a decent meal. We rarely feed them outside food because some of the kids have food allergies and they all actually prefer home cooked meals when they’re not out and about. On those days that time just gets away from us we have some go-to recipes that we know they love and we can whip up in under 10 minutes. Whether it’s a lunch between a million activities or a dinner that is just too late in the evening to make elaborate, these are the meals that are always stored in the back of our minds. Hope your little ones enjoy them as much as ours do!

Bean and Cheese Quesadilla
Ingredients:
-Tortilla
-Can of Red Kidney Beans (this is a shortcut)
-Taco Seasoning
-Cheese
-Pasta Sauce / Enchilada Sauce
-Sour Cream/ Salsa
Steps:
-Rinse the red kidney beans
-Blend beans and taco seasoning in mixer
-Heat tortilla on pan
-Remove onto plate
-Spread half with pasta sauce or enchilada sauce
-Spread other half with blended beans
-Shred cheese on side with sauce
-Fold in half and heat on pan on low – medium heat

-Cut and serve with salsa or sour cream & enjoy!

Soji Poodla with Spinach
Ingredients:
-Soji (1 Cup)
-Spinach – finely chopped (1/2 cup)
-Yogurt (1/3 cup) plus dipping
-Salt (to taste)
Paste (to taste)
-Eno (optional) (pinch)
-Water as needed
-Oil for sautéing
Steps:
-Finely chop spinach and rinse
-In a large bowl, mix soji, yogurt, salt, paste, and spinach adding water until pancake batter consistency
-Let sit 5-10 minutes
-Mix again and add a little water if too thick to get back to pancake batter consistency
-Add pinch of Eno when ready to prepare Poodla
-Spray pan with oil and spread mix like pancake
-Flip once, when both sides lightly browned, remove, cut and

-Serve with yogurt or Ketchup & enjoy!

Pizza Crescent Rolls 
Ingredients:
-Pillsbury Crescent Rolls
-Pasta Sauce
-Shredded Cheese
-Broccoli
Steps:
-In a pan, saute broccoli in EVOO sprinkle salt and pepper
-Lay out crescent rolls in oven tray
-Place dollop of pasta sauce, broccoli, and shredded cheese at wide end
-Fold corners of wide end over (to hold in contents) and roll towards thin end
-Bake per package instructions (9-12 minutes)

-ENJOY!!!!

Naan Pizza
Ingredients:
-Naan (Pita Bread) (we love Arnold’s Pita Bread for this)
-Pasta Sauce
-Cheese
-Toppings (Green Pepper, Onion, Jalepeno, etc)
-Pizza toppings (optional – oregano, Parmesan cheese, crushed red pepper, etc)
Steps
-On pita bread spread pasta  sauce, shred cheese, add veggie toppings
-Place in toaster until cheese melts
-Add pizza toppings as desired, enjoy!
 
 
Toaster Sandwich
Ingredients:
-Any filling, we usually use a curry from the day before, can use pav bhaji, cauliflower curry, rajma/chick peas curry, etc – just don’t put too much gravy as it will get soggy
-Bread
-Butter/Ghee
-Toaster Sandwich Machine (or make on pan)
-Ketchup for dipping (optional)
Steps
-Heat curry/stuffing (we usually blend the curry a bit so the sandwich stays closed)
-Put butter/ghee on outside of bread slices, removing crust if requested by the kids
-Place curry in between two breads and make sandwich and place in machine
-Close lid and wait for ready light!

-Serve with Ketchup and enjoy! (be careful as inside will be veryyyy hot)
